An easy, high fiber, high protein, breakfast treat with a secret middle layer. Gluten-free and delicious!
These blueberry pancakes are one of my favorite Saturday morning breakfasts!
Who wants to make these for me in the morning? :)
I feel like one thing that a lot of health blogs I read have in common is OATMEAL. It seems like all of the healthiest people eat oatmeal for breakfast just about every single day. Unlike the rest of my family, I’ve actually always enjoyed eating oatmeal for breakfast so its not too much of a huge change for me.
Yesterday, I tried Clean Eating Chelsey’s over-night oats recipe and while it was healthy and delicious, I didn’t have the chia seeds to give it that little extra kick. Also, to be completely honest, I hate doing dishes and wasn’t the biggest fan of having an extra pan to wash (ok, so maybe that’s just me being lazy).
Today, I made some of my favorite Trader Joe’s Heart Healthy Blueberry instant oats. Little did I know, this was exactly what I was looking for… these already have all of those healthy things added in (flax seed, plant sterols, inulin) and since I don’t have any of this in the pantry yet this was a perfect way to get it! I also added a cut up banana (banana’s make anything better) and voila!
I even got to eat breakfast outside before the temperatures got too hot hot hot! Eating meals outside = happy healthy Heather.

It’s been wayyy too long since I’ve had one of these! Last year, my favorite breakfast was an ABP egg & cheese bagel sandwich and hot green tea. It was pretty convenient too since I it was on my way to just about all of my classes… I’ll definitely be getting one of these tomorrow (or at least sometime this week!)
